Gluten Free & Dairy Free Pancake Recipe

This gluten & dairy free pancake recipe is a real winner in our house, it's super quick & simple, & the pancakes taste delicious! Perfect to get all the family involved in making pancakes for Shrove Tuesday, or any other day.

I don't know about you, but when I'm making pancakes I want something that's quick & easy, ready for the queue of ravenous pancake fans eagerly waiting, & this recipe ticks that box. We've been gluten & dairy free for a while now & those first initial tentative steps into a new diet were daunting. There were so many delicious recipes out there but often containing a plethora of ingredients I wouldn't normally have in my kitchen cupboard. After a lot of trial & error & many dishes not even make it to the table (!) we finally got into the swing of things & meal planning is thankfully much easier now. 

When it came to pancakes which are traditionally made with ingredients containing dairy & gluten we thought we'd try some alternatives. After a little experimenting & 'interesting' taste testing we came up with this recipe which produces light fluffy pancakes, that not only taste delicious but are really quick & easy to make too.

To make our pancakes we used the following which makes approx 4 large pancakes.
If you need to make more, just multiply the ingredients.

125g Dove Self Raising Gluten Free Flour
(We found the Self Raising Flour gave the pancakes a light fluffy texture)
1 Free range egg
250ml Almond milk (or Soya Milk)
Pinch of Fairtrade sugar (optional)
Sunflower oil spray

:: Whisk the egg & milk together & then slowly pour into the flour, whisking all the time to create a batter. Keep whisking until all the flour has disappeared into the mix & there are no lumps & the batter is smooth. 

:: Pour a ladleful of the batter into a hot lightly oiled non-stick frying pan & cook on a high heat. When bubbles start to appear on the surface of the batter turn the pancake over & cook until golden. We found it easier to add less batter mix as the pancakes cooked more quickly & evenly.

Then the pancakes are ready to serve & decorate with your favorite toppings. Does your family have a favourite? I love to offer a selection of fresh fruit alongside some maple syrup, & some Alpro yogurt which is dairy free. 

If savoury food is more your thing, then his recipe, minus the sugar, would be ideal for creating some savoury pancakes too.
