Fairtrade Banana Muffins & Banana Book

This recipe for Banana Muffins is so simple & quick to make, perfect for impatient toddlers, or anyone who likes a sweet treat with their morning coffee.


Ingredients:
2 Fairtrade bananas (the riper the better)
6oz Fairtrade caster sugar
4oz Butter (softened)
2 large eggs
2 tablespoons of milk
1 teaspoon of baking powder
8oz Self raising flour

The method for this recipe is simple! Mash the bananas, & add them with the other ingredients to a large mixing bowl & beat until blended.





Spoon the mixture into muffin cases & bake in a preheated oven (180˚C, or for fan ovens 160˚C) for 25-30mins. When cooked leave on a wire rack to cool.


These delicious banana muffins are great served with a little yoghurt or enjoyed just as they are.

'Beautiful Bananas' by Elizabeth Laird, tells the story of a young girl in Africa who sets off to take a bunch of bananas to her grandfather. Along the way she meets some wild (but friendly) animals & her bananas get lost as her journey unfolds. Eventually, an elephant picks up a bunch of bananas & the young girl has a gift for her grandfather once more. The colourful illustrations, & fun text make this a great book for exploring food & where it's produced, animals & habitats, countries, & cause & effect. 
Let's hope our banana muffins reach their destination, & don't get eaten lost along the way!
